How I Like It

Sexy little title for a Sunday morning!  What else do you expect with a post that ended up being all about eggs.  I didn't think "How I Like My Eggs" would bring much interest so decided to cut it short!

There's a movie... older one, where the main lead never knows how she likes her eggs... and however the guy she dates likes his eggs, that's how she orders them... until the end of the movie where she determines exactly how she likes them  (poached maybe, i forget).  For the life I can't think of the movie - but saw this blog post and was reminded of it probably because I recently! found the way I best love my eggs.  I know, serious stuff.

My preference is not very runny but not not runny either.  Yep, quite finicky... shocker.

About a tablespoon of butter in the pan (love this pan) - let it bubble then crack in 3 eggs... let the whites firm up a bit - couple minutes, then before you'd naturally get ready to flip them, break the yolks with just one or two punctures of the spatula - let them sit for a minute until you can flip an entire egg - after I flip them, I turn the burner off and let them just cook up for another minute or so... I often serve my eggs on top of a mixture of shredded carrots, red peppers, & garlic that I saute before cooking the eggs and then top that all with goat cheese and salt.  yum.

I think I ate this 4 times for dinner 2 weeks ago and seeing how hungry I got just writing about it, there's a good chance a dozen eggs will make it into the cart next trip around the aisles.
