30 wks and Recipes

30 wks today!

C kept saying, open your eyes you look chinese, so yeah there's that
dr apt tues and she said healthy momma, healthy baby - such elation in my heart

sharing a couple easy recipes this morning that have really been sitting well with me for the past couple of wks:

been starting the day off w/ this smoothie recipe - call it celery-sauce cuz i keep it thicker and i eat it with a spoon

1 piece celery. half cucumber. 1 gr. apple
1T chia seeds. handful parsley. 5-6 ice cubes (blend)
topping: diced apple. cinnamon. lemon juice


and this soup!  carrot soup is so underrated in my book - this soup is so creamy and flavorful, simple and just down right delicious... i've made two batches in the last 2 wks and plan on making a 3rd, just not close to sick of it yet

saute half onion in oil/butter of your choice (i use grapeseed oil) until soft
add 15-20 carrots, dice half of them and cut the remaining in half sticks
saute for 5 min or so w/ the onions then add to your liking
turmeric, salt, & onion powder 
(i maybe do 1/2 T turmeric & salt; 1 T onion powder)
stir well then add 4 c chicken broth and 2 cups of water
simmer til large half sticks of carrot are soft
pull those out and blend w/ some of the liquid to get creamy consistency you like
pour back into the soup and then I add just small amount of black pepper
I always squeeze lemon juice on it before i eat a bowl, makes a huge difference! YUM!

don't get the idea i eat like this all the time, lands not much food this girl doesn't love,
like pumpkin pie - been eating the heck out of that lately too! do feel so much better 
when i eat better though and of course a baby in the belly provides quite the motivation!
